Our bean are transformed using three distinct methods, each crafted to bring out a different aspect of the bean's character:

  • Wet-Milled: The cherries are pulped and washed, yielding a crisp, clean cup with a vibrant acidity and bright notes.

  • Honey-Processed: The pulp is removed, but a sticky layer is left on the bean to dry, giving the coffee a balanced sweetness and full body with a hint of fruit.

  • Naturally Sun-Dried: The entire coffee cherry is laid out to dry in the sun, allowing the sugars from the fruit to infuse the bean. This results in a coffee with a bold, complex, and deeply fruity flavor profile.
